I had participated in  a story /poetry writing competition  on occasion of Mother's day . I am one of the winners . The results were been declared  on my mother's birth anniversary whom I lost 2 years ago to heart ailments n dementia .  Happy Birthday dearest MA πŸŽπŸŽˆπŸŽ‚πŸŽ‚πŸŽˆπŸ₯³πŸ₯³πŸ’πŸŽ‚  . This cake was a tribute to my darling mom ❤️ on her birth anniversary . She would have been 84.  Happy Birthday dear Ma Happy Mother's day       COCONUT CAKE ( Made the batter in the blender) WET INGREDIENTS Sugar 3/4 _1 cup Oil _ 1/3 cup Essence DRY INGREDIENTS ( Sieve together before blending) Flour 1.5 cups Baking powder 1 tsp Baking soda 1/2 tsp Dry dessicated coconut 1/3 cup grated ( keep about 2tbsp aside for the topping) ( I have used milk to make the batter)   METHOD Pre-heat the oven to 180 degree celcius for 10 minutes Make the batter Pour into greased and lined cake dish  Sprinkle the reserved  grated  coconut  Bake f...

TRES LECHES CAKE

TRES LECHES CAKE Made this beauty today with the left over rabri after making mango kulfis yesterday. The rabri has thickened and become more delicious .  I used the rabri to give a royal  Tres leches ( 3 milk )   bath to my Cleopatra ( Simple EGGLESS VANILLA RING CAKE ) . I have dressed  the royal highness with mangoes ( slices n chopped) EGGLESS VANILLA  CAKE  ( made quick one bowl batter) Banana  _ 1 mashed Sugar 1 cup Flour 1.5 cups Baking powder 1tsp Baking soda 1/2 tsp Vanilla essence Baked in preheated oven at 180 degree Celsius for 30 _ 35 minutes ( Inspite of having no oil / butter in it the cake turned out awesome)  Turn it into the serving dish Poke holes in the cake  TRES LECHES _ RABRI ( home made) Boil 1  Pour the rabri generosity ( let it trickle down the sides )  Reserve some rabri to pour on the cake while serving Decorate with mangoes Chill and serve with the reserved rabri

Lemon cupcakes with lemon glaze When God gives you lemons, make lemonade . But I prefer to also make cupcakes with lemon glaze . Howzzat πŸ˜‚πŸ˜œ It's lockdown time . All cooped up indoors . Trying to make good use of time by brushing up my writing  skills & trying to fulfil  my lifelong dream of seeing my work published . Occasionally whipping up a new dish is also in the agenda .     Today in the morning made my husband's favourite ' Aam er chatni' ( Bengali way) . Then in the evening decided to make these easy peasy  cupcakes . They can be baked with the ingredients readily available at home _ whole wheat flour, sugar and lemon being the main.
