COCONUT CAKE

I had participated in  a story /poetry writing competition  on occasion of Mother's day . I am one of the winners . The results were been declared  on my mother's birth anniversary whom I lost 2 years ago to heart ailments n dementia . 
Happy Birthday dearest MA πŸŽπŸŽˆπŸŽ‚πŸŽ‚πŸŽˆπŸ₯³πŸ₯³πŸ’πŸŽ‚  . This cake was a tribute to my darling mom ❤️ on her birth anniversary . She would have been 84.

Happy Mother's day 
     COCONUT CAKE
( Made the batter in the blender)
WET INGREDIENTS
Sugar 3/4 _1 cup
Oil _ 1/3 cup
Essence
DRY INGREDIENTS ( Sieve together before blending)
Flour 1.5 cups
Baking powder 1 tsp
Baking soda 1/2 tsp
Dry dessicated coconut 1/3 cup grated ( keep about 2tbsp aside for the topping)
( I have used milk to make the batter) 
 METHOD
Pre-heat the oven to 180 degree celcius for 10 minutes
Make the batter
Pour into greased and lined cake dish 
Sprinkle the reserved  grated  coconut 
Bake for 35_40 minutes or till the skewer inserted into the middle of the cake comes out clean 
I have decorated with jam .
