PUMPKIN CHRISTMAS CAKE πŸŽ‚

This is an eggless,  oil less,  butter less and dairy free  cake 

INGREDIENTS  NEEDED TO MAKE THE CAKE πŸ‘‡πŸ‘‡

Apple                   1 medium size ( pureed)

Pumpkin              1cup (grated )

Jaggery                  1cup( chopped)

Dates                      1 cup( chopped) 

Flour (I have used whole wheat flour)  1.5 cups 

Semolina                   1/2 cup 

Baking powder          1 tsp

Baking soda                1/2 tsp 

Spice mix                      1/2tsp 

Dry fruits,  tutti frutti, raisins  

TO MAKE THE SPICE MIXπŸ‘‡πŸ‘‡

Grind the following in mortar and pestle 

Sieve the coarse powder 

Green cardamom             3

Nutmeg                             pinch 

Cloves                                  3

Cinnamon                           A small piece 

TO MAKE THE JAGGERY AND DATESπŸ‘‡πŸ‘‡ SYRUP 

Add the chopped Jaggery in 2cups of water  

Cook the Jaggery till it melts 

Add the chopped dates and cook for sometime 

Remove from heat 

Add the raisins and tutti frutti ( reserve some to Sprinkle on top)

Keep the JAGGERY AND DATES SYRUP aside 

METHOD TO MAKE THE CAKE πŸ‘‡πŸ‘‡

Grease and line cake mould with brown paper/ parchment paper/ butter paper 

Preheat oven at 180°Celsius for 10minutes minutes 

FOR THE DRY INGREDIENTS πŸ‘‡πŸ‘‡

Sieve flour,  Semolina,  baking powder and soda 3_ 4 times 

Keep aside 

FOR THE WET INGREDIENTS πŸ‘‡πŸ‘‡

Puree the apple 

Pour the puree in a mixing bowl 

Add the grated pumpkin 

Add the Jaggery and dates syrup

Add the  spice powder 

Mix and keep aside for  sometime for the flavors to infuse 

METHOD TO MAKE THE BATTER πŸ‘‡πŸ‘‡

MIX the dry ingredients in the wet ingredients 

Add chopped cashew nuts, almonds, Pistachios, walnuts 

Mix well using cut and fold method to incorporate all the ingredients and make the  batter ( Don't overmix)

Pour the batter into the prepared cake 

Sprinkle reserved crushed dry fruits and tutti frutti 

Bake the cake for 40 _ 45 minutes 

Remove the cake from the oven 

Cool the cake completely on the wire rack 

Unmould and Remove the paper 

Revert  the cake back 

Decorate and enjoy your Christmas πŸŽ„with this healthy  cake πŸŽ‚

( It tastes better the next day)
