Almond Coconut Chocolate cake



This sugar free, gluten free and dairy free, yet moist, spongy and healthy cake was baked by my younger sister on Christmas.
You don't need any occasions to bake cakes. Make any day a special occasion by baking delicious cakes and surprising your family and friends!

DRY INGREDIENTS
  • Almond flour - 11/2 cup
  • Coconut flour - 1/2 cup
  • Cocoa powder - 1/4 cup
  • Coconut flakes (optional)  - 2 tbsp 
  • Baking soda - 2 tsp
  • salt - pinch
  • Chocolate chips - 1/2 cup

WET INGREDIENTS
(Cream together these wet ingredients in a separate bowl) 
  • Oil - 1/2 cup
  • Honey - 1/2 cup (Feel free to adjust the honey to your preferred sweetness)
  • Coconut milk(if needed) - 1/4 cup
  • Vanilla extract or essence  - 1/4 tsp
  • Eggs (at room temperature) - 3
  • Large very ripe bananas - 2 

PREPARATION STEPS:
  1.  Preheat the oven to 180°C.
  2. Lightly grease a baking dish and set aside.
  3. In a large bowl, mix together all the dry ingredients except Chocolate chips.
  4. In a blender, process the wet ingredient.
  5. Then gradually pour the wet ingredients into the dry and mix well until the batter is smooth and lump free.
  6. Use coconut milk, as needed, to make a smooth lump free batter.
  7. Add the chocolate chips and stir the batter. 
  8. Pour this batter in the greased baking dish and bake for 40 to 45 minutes till toothpick inserted in the center comes out clean.
  9. Once the cake is cool remove from the dish and enjoy!
