Christmas Fruit Cake
No Christmas is complete without the Christmas cake. Usually these cakes are made of dry fruits and nuts w(raisins, cashew nuts, almonds , pistachios,prunes, apricots,candied Orange and lemon peels, tutti frutti, lemon and Orange zests etc) in alcoholic drinks months or even a year ahead of Christmas. But my family being teetotalers, I soak them in orange or mixed fruit juice a couple of days in advance in the fridge. I remember helping my mother soaking up the chopped dry fruits and nuts when I was a kid π.
I have used apples as an egg substitute to bake this cake. Here goes the recipe of my soft, spongy, egg-less, butter less(except for greasing the cake dish), teetotaler Christmas fruit cake
DRY INGREDIENTS
- Refined flour - 2 cups
- Powdered sugar - 3/4 cup
- Baking powder - 1.5 tsp
- Baking soda - 3/4 tsp
- Caramelized sugar - 1 tbsp (For the method to caramelize sugar see my recipe Eggless caramel custard powder & oats bread pudding)
- Cinnamon powder - pinch
- Dry fruits like chopped almonds, Pistachios, cashews, walnuts, prunes, raisins and some orange zest
- Whole Spices - a stick of cinnamon, few cloves and a pinch of nutmeg powder
WET INGREDIENTS
(Blend these together until light and fluffy. Keep aside)
- Apple - 1
- Fruit juice - Soak the dry fruits and whole spices in 1 cup fruit just a day prior to baking the cake.
PREPARATION STEPS:
- In a large bowl, sieve together refined flour, baking powder and baking soda. In this add the remaining dry ingredients and hand mix it well.
- In the blended wet ingredients, add sugar and mix it well.
- Now fold in the dry ingredients lightly into the wet ingredients.
- Add the caramelized sugar n mix well.
- Add the soaked nuts and dry fruits (Reserve some for garnishing) .
- Add more juice if needed to form a smooth batter.
- Pour the batter into greased n lined cake dish.
- Sprinkle the reserved dry fruits and nuts on top.
- Bake in pre-heated oven at 180°C for 35 to 40 minutes till done.
- Once the cake is cool remove from the dish and enjoy!
