Cucumber carrot cake
CUCUMBER CARROT CAKE
This delicious cake is a take off on the famous Goanese cake , ' Tavsoli' or 'Tausali' . It's primarily made of Semolina ( Suji), eggs , sugar or sometimes jaggery and shortening . I have made an eggless version of this cake .You can also use 1 cup of grated fresh or dessicated coconut instead of carrots . ( I have made both the versions )
INGREDIENTS
Mix together in a big bowl till there are no lumps
Semolina (Suji ) 1cup
Curd. 1cup
Milk as needed to make a smooth batter
Grated cucumber 1 cup
Grated carrot. 1cup
Baking powder 1tsp
Baking soda. 1tsp
Jaggery/ Sugar. 1cup
Malai 2Tbsp
Ghee 2Tbsp
Dry fruits.( Cashew nuts, raisins, almonds, pistachios, coconut flakes) ( optional)
Green cardamom powder (Elaichi powder ) 1/4 tsp
Preheat oven to 180 degree celcius
Grease and Line cake dish with butter paper or brown paper
METHOD TO MAKE THE CAKE BATTER
If using jaggery ( gur) , soak it in some warm water . Strain it to remove the impurities._ keep aside. (I have tried both the versions ) . Jaggery is used in the authentic Goanese Tavsoli . However , the taste of Cucumber is predominantly distinct in a cucumber cake .I had used carrots to get rid of that ' cucumbery' taste in cakes which my taste buds are not used to .
Mix Semolina, baking powder and baking soda
Add jaggery/sugar (powdered) ,malai ,ghee , cardamom powder , dry fruits , nuts and coconut flakes
Make a lump free smooth batter
Pour batter into cake dish & bake for 40 min or till done
Unmould n peel off paper
Let the cake cool for some time . Cut into slices and enjoy this healthy and nutritious cake with a cuppa tea or coffee ๐
