Dates and Raisins Steamed Cake
Eggless, oil less & butter less cake.....yet so spongy, fluffy & delicious!
I steamed this cake in my Momo maker instead of baking it. It so happened that just after I prepared the batter, the electricity played truant. Wondering what to do, as there was no surety when the electricity would return, I suddenly remembered I had once seen the host of a cookery show steam the cake batter in a Wok filled with water. She placed a perforated plate in the Wok on which she placed the cake dish. She then, covered the cake dish with an aluminum foil and put a lid over the Wok. The result was amazing!
So it struck me why can't I do the same in my Momo maker! Ta-da! the result was a steaming beauty relished by the entire family ๐
DRY INGREDIENTS
- Whole wheat flour (Atta) - 2 cups
- Powdered Sugar - 1cup
- Baking powder - 1/2 tsp
- Baking soda - 1/2tsp
- Cinnamon powder - pinch
- Chopped seedless Dates - 1/2 cup
- Raisins - 1/2 cup
- Dry fruits of your choice
WET INGREDIENTS
- Vanilla essence
- Milk as needed to make a smooth batter
- Banana - 1
PREPARATION STEPS:
- Mash the banana in a bowl
- Beat the sugar powder, cinnamon powder and vanilla essence along with the mashed banana.
- In another bowl, mix sieved wheat flour( OR use 1 cup wheat flour + 1 cup refined flour). Mix the remaining dry ingredients like baking powder, baking soda and dry fruits to the flour.
- Use a light hand to mix the batter lightly in one direction until it is well blended.
- Now add finely chopped dates n raisins to the batter.
- Add milk as needed.
- Pour into greased baking dish.
- Steam till done (or you can bake too)
BAKING PROCESS
To bake in the oven, first preheat the oven to 180°C for 5 minutes and then bake the cake for 40 to 45 minutes till done.
STEAMING PROCESS
(I have used my Momo maker to make this cake. You can also use a steamer.)
- Fill enough water in the steamer so that it doesn't dry up while the baking process in going on, otherwise the cake will get burnt.
- Let the water boil for 5 minutes to preheat the steamer.
- Transfer the batter in a greased cake dish that fits the steamer.
- Cover the cake dish with aluminum foil so that water doesn't seep into the batter while steaming.
- Place this cake dish into the steamer.
- Cover the steamer with a lid.
- Steam on high flame for 5 minutes.
- Lower the flame and steam for 40 to 45 minutes till knife inserted in the cake comes out clean. This would indicate the cake is done.
