EGGLESS CARAMEL CUSTARD POWDER AND OATS BREAD PUDDING


I remember my mother used to make awesome bread puddings . Of course she used eggs , as that time  I was a hard core non vegetarian who couldn't survive without her daily dose of eggs , meat and fish . But after I turned a vegetarian ( only odd one in the family, for no specific reason) . I looked up google  and experimented  with several eggless versions of this classic dessert . After many trials and errors and several failed efforts ,I finally succeeded with this one.
         This is one of  my son's favorite desserts .
 I have made the  bread and butter pudding with  a few changes in the original recipe which calls for using eggs .I have even made this delicious pudding  in individual bowls . Though   the authentic recipe doesn't call for it ,I have ventured out  to use  powdered oats  .I didn't regret  it as my experiment clicked and the outcome was a super success .  I use malai ( cream formed on top of boiled and cooled milk ) , instead of butter  . 
  I  always feel  apprehensive while making the caramel . I think it's the trickiest part of this recipe If you aren't focused it  will burn and turn bitter  or crystallize
 This is a short cut recipe and can be made in a jiffy.

INGREDIENTS FOR THE CARAMEL
Sugar.                     3_4TBSP
Water.                     1TBSP
Hot water.                1.5_ 2 TBSP
METHOD TO MAKE CARAMEL

Cook sugar and 1 TBSP water on low flame till golden brown ( Do not stir with spoon . Just swirl the pan when making the caramel)
Remove from the flame and add hot water carefully swirling the pan . ( Be careful as the hot caramel may splutter
Pour  the caramel into individual microwave safe bowls and keep aside
INGREDIENTS FOR THE BATTER
 mix in a big bowl the following ingredients
bread slices chopped up roughly  5 _6
Butter               1.5 TBSP ( I used malai )
Sugar _                               3_4 TBSP
 vanilla custard powder       2TBSP ( mixed with little cold milk )
Oats                              2TBSP
Vanilla essence
Milk as needed to make batter  1 cup
Dry fruits
Pour over the caramel and microwave for 4_5 minutes  till done
Cool a bit and unmould
Another Version of the yummy caramel pudding:-
COFFEE CARAMEL PUDDING
  Caramelized sugar

This is  also another of my family's very favorite desserts . In this version of the classic  caramel pudding , I have used coffee to give the pudding a coffee flavour along with the caramel . You can use cocoa powder / chocolate powder instead of coffee to make the pudding .


           
                     FOR THE CARAMEL
Sugar _ 2 TBSP
Water 2 TBSP
Mix 2Tbsp sugar n 2 Tbsp water in a thick bottom pan
on low heat till it is golden brown ( stir constantly)
Pour the caramel into a greased mould and swirl it so that it costs the mould evenly
Keep aside

      FOR THE  PUDDING
Glucose Biscuits  - 4-5 broken into small pieces
Bread ( white/brown)  - 2 slices( I have used brown
Milk - 1cup
Sugar 1Tbsp
Coffee powder 1tsp ( dissolved in some water)
Mix all the ingredients in a small bowl well
Pour the mixture in a pan
Cook on low flame till it thickens, stirring continuously.
Pour the pudding mixture on the caramel
Microwave for 3 _4 minutes or till done
Let it cool and then unmould on the serving plate
Garnish with crushed almonds
