Dates and cornflour cake
This cake recipe holds a special place in my heart as I had first made it on my parent's 52nd marriage anniversary. They loved every bite of it ๐

DRY INGREDIENTS
- Whole wheat flour (Atta) - 3/4 cup
- Cornflour - 1/4 cup
- Powdered sugar - 3/4 cup
- Baking powder - 1/2 tsp
- Baking soda - 1/2 tsp
- Cinnamon powder - pinch
- Ginger powder - pinch
- Chopped seedless dates (Khajoor)
- Dry fruits n nuts like Cashews, Pistachios, Raisins, Walnuts & Almonds
- Chocolate Gem candies
WET INGREDIENTS
- Milk Cream (Malai) or any Vegetable oil - 3/4 cup (I have used cream in this recipe)
- Milk as needed to make a smooth batter
PREPARATION STEPS:
- Preheat oven to 180°C.
- Grease n flour or line cake dish with parchment paper (I still follow the old school of lining n greasing cake dishes with brown paper n believe it works).
- In a large bowl, beat together cream, powdered sugar and cinnamon powder. Using a light hand, mix this batter lightly in one direction till well blended.
- In a separate bowl mix chopped Dates, dry fruits n nuts and keep aside.
- In another large bowl sieve the wheat flour, cornflour, baking soda and baking powder (Dry ingredients)
- Now mix steps 3, 4 and 5 together.
- Add milk as needed to make a smooth lump free batter.
- Make sure to gently fold the cake batter in one direction until well blended.
- Pour the cake batter into your greased n lined cake dish.
- Bake at 180°C for 35 - 40 minutes or till a knife inserted in the middle comes out clean.
- Decorate with reserved dry fruits n chocolate gem candies.
