Gajar ka halwa cake
GAJAR kA HALWA CAKE ( CARROT PUDDING CAKE)
(A cake π made with left over carrot pudding ( gajar ka halwa) . This is another of my successful experiments ).
GAJAR kA HALWA ( Indian carrot pudding) is a popular and relished winter dessert made by cooking grated carrots with milk , sugar and milk solids ( khoya ) along with other ingredients as given in the recipe below
MAVA ( MILK SOLIDS) _ Made by cooking milk on low flame patiently, stirring continuously,till it evaporates and becomes a solid mass . It can takes whole lot of time, energy muscle power and patience to make mava . It's used in making of many varities of Indian sweets and desserts .
For a long time, I wanted to bake a Carrot Cake and also a Mava Cake .
The opportunity came when one day about 2 cups of halwa made for dessert was left . I thought why not use it to bake a cake as the halwa had both the ingredients , carrots and mava in it . And He presto ! Thus was born my delicious , succulent and spongy Gajar ka halwa cake , full of flavours .ππ
As the halwa already had carrots , mava , sugar , milk and dry fruits in it , I just made a cake batter and layered it with the halwa and baked it in a preheated oven at 180 degrees Celsius for 30_ 35 minutes or till a needle inserted in the middle of the cake came out clean .
Yummy π gajar ka halwa cake was ready in a jiffy . Enjoy
I decided to make an oil less cake as the halwa already had loads of ghee in it .
INGREDIENTS TO MAKE THE GAJAR kA HALWA CAKE
Fresh or left over Gajar ka halwa 2 cups
Atta / maida _ 2 cups
Baking powder_ 1tsp
Baking soda_ 1/2 tsp
Sugar (powdered) _ 1cup ( feel free to add more sugar if you want a sweeter cake . I didn't add any extra sugar as the halwa already had sugar in it )
Vanilla essence
Apple _ 1 ( chopped)
Milk _ As needed to make a smooth batter
METHOD TO MAKE THE CAKE BATTER
Cream together apple , sugar and essence
Add atta , baking powder and baking soda
Make a batter with milk
Pour some batter in a greased and lined cake dish
Spread a layer of halwa
Repeat the layers ending with batter
Bake in Preheated oven at 180degree celcius for 30_35 minutes or done
I used some halwa to garnish the cake π
INGREDIENTS TO MAKE THE GAJAR HALWA
1 kg grated carrots
1 litre full cream milk (boiled and cooled , but at room temperature)
3/4 _ 1 cup sugar
4 tsp ghee
8-10 whole or chopped cashews
8-10 almonds
8 _ 10 pistachios
8 _10 golden raisins
Khoya ( milk solid)
Saffron _ pinch ( mixed in little warm milk)
METHOD
1)Wash, peel and grate the carrots (gajar).
2)Heat a little ghee in a heavy bottom pan 3)Roast the dry fruits for 1 _ 2 minutes . Crush the pistachios, cashew nuts and almonds coarsely with a rolling pin and keep aside
4)Add some more ghee to the same pan
5)Add grated carrot
6)Cook carrots until they turn soft
7)Now add the milk.
8)Cook the mixture on low flame until the milk evaporates and reduces to half .
(Stir continuously and patiently , so that milk does not stick to the bottom of the pan )
9)Add the sugar , cardamom powder and saffron
10) When more than 1/2 of milk evaporates, add some more sugar. & ghee n mix it well with the carrots
11)once again, cook the carrots for some more time on low flame until all the milk evaporates
12)Add the rest of the ghee and Mava (milk solids) and mix till they dissolve
13) Garnish with grated khoya/ mava and dry fruits
