COFFEE /CHOCOLATE / CAKE / CUPCAKES

Though I don't like the smell of bananas, especially ripe or overripe ones , I don't mind having banana cake, banana bread or cupcakes. Moreover, I use bananas as egg replacers , as I bake only eggless cakes and puddings .
        COFFEE / CHOCOLATE / CAKE /       CUPCAKES
WET INGREDIENTS
Bananas     2
Sugar.          3/4 cups ( powdered in your coffee grinder)
Vanilla essence  _ 1/4 tsp
Cinnamon powder _ pinch
METHOD TO MAKE THE WET BATTER
Beat 2 bananas
Add 3/4 cup powdered sugar and mix
Add cinnamon powder , vanilla essence and mix
DRY INGREDIENTS
Flour ( Maida )/ whole wheat flour (atta) - 1.5 cups
Baking powder -1/2 TSP
Baking soda- 1/4tsp
METHOD TO PREPARE THE DRY INGREDIENTS
Sift all ingredients listed under dry ingredients 2-3 times
Keep aside
BASIC BATTER
Mix dry n wet ingredients
Add coffee / cocoa powder  and make a smooth batter ( add some milk if the batter is thick)
Add dry fruits if using
As I was making both coffee and chocolate cupcakes, I first made the basic  batter . Then poured half of the batter in another bowl
Added some warm water in 1 tsp coffee powder  and added it to half of the batter (For coffee cupcakes)
In the other bowl of batter I added some cocoa powder ( For Chocolate cup cakes)

Mix lightly and make a smooth batter
Put in muffin tray lined with paper cups
Bake in preheated otg - 180 degree  for 25_30 minutes till done
I have decorated with chocolate sauce , jam , crushed gems
     I have used the same recipe to make the chocolate cake by baking in a preheated oven at 180 degree celcius for 35_40 minutes till a done

Adding a little coffee powder to the batter while making a chocolate cake adds to the flavor and colour .
