HOT CHOCOLATE FUDGE CAKE
    ( My own take on the original hot chocolate fudge  cake ๐Ÿ˜‹๐Ÿฐ)
Please don't go by the look of the cake . It may not be a perfectly risen or a good looking  cake but it surely tasted awesome and fudgy.
It so happened that one lazy Sunday , just after breakfast I got a phone call from a friend of mine that she would be coming over for some work .
           At this short notice all I could think of was a biscuit cake . So I put together all the ingredients required to bake this cake and let the microwave do the rest of the job , till I got ready .
But when the cake came out of the oven , it was sunken . I just couldn't understand where I had gone wrong with this foolproof recipe . Then I saw the culprit staring at me . In haste I had forgotten to put the Eno in the batter . The pouch lay unopened on the kitchen counter . ' Haste makes waste'. But I hate wastage of food . The very thought of dumping the failed cake was troubling me .
'Dont cry over a disastrous attempt at making biscuit  cakes ' .
This  is what I have learned after my first attempt at making these ,  one  summer day.  I crumbled up the ' failed'  cake and put it back in the blender jar . Added some milk  .This time I didn't forget the Eno  and  put  the  batter  in  a microsafe bowl and microwaved for 2-3 min . Voila ! Soon it was  converted  into a yummy Fudge cake  , though not too good looking .

Dressed  it up beautifully with the left over FROZEN MANGO YOGHURT , I had made for dinner previous night and it was such a satisfying feeling to see my creation been relished by my friend , her little daughter and my family.

FOR THE CAKE
Bourbon cake  2 packets ( powdered)
You can use any biscuits to make this recipe . Posted recipe of the rusk and glucose biscuits earlier ))
Sugar (powdered) 2-3 tbsp optional. I didn't use sugar
Vanilla essence
Dry fruits
Milk to make the batter
ENO / fruit salt  ( blue plain) - 1 tsp / 1 pouch  . Can substitute with  1 tsp baking soda

METHOD TO MAKE THE CAKE

Crush biscuits in a coffee grinder ( I had taken  two packages of bourbon chocolate cream biscuits to make the lava cakes  . Though my actual plan was a flop, thankfully my plan B worked and I got a yummy fudgy cake . )
Add some milk as needed to make a batter
Add chopped dry fruits  and mix lightly
Add  baking soda or plain  Eno (fruit salt )
Pour into greased baking dish and bake in microwave  for 3 _ 4 minutes  till done
Keep aside to cool well

TOPPING
Hung curd  _  2 cups
Honey _ 2 tbsp
Mango _ 1 small ( 1/2 purreed and rest chopped)
Vanilla Ice cream  1  cup
Green cardamom powder
METHOD
TO MAKE THE HUNG CURD
Put curd ( 1/2kg) on a strainer lined with a clean cheese / Muslin cloth  .
Keep the strainer on a big bowl
Tie the cloth into a bundle
Keep the strainer along with the bowl in the fridge for 1_3 hours , so that the curd doesn't go sour
Open the bundle and scrape the residue left in the cloth with a spoon . This is the HUNG CURD

METHOD TO MAKE THE FROZEN MANGO YOGHURT TOPPING
Beat  hung curd well till smooth and lump free with honey and green cardamom powder
Add mango pulp and mix lightly
Add small pieces of mango and  mix lightly
Add some vanilla ice cream n mix lightly
Pour into a dish with lid
Freeze for some time
Remove n mix by hand to remove the Ice crystals​ . Do this 2-3 times
TO SERVE
Remove frozen mango yogurt from freezer
Scoop some into a glass bowl
Pour some chocolate sauce over it
Place the cake on it
Top it with remaining mango yogurt and chocolate Sauce , chopped dry fruits  and cornflakes
 Enjoy with a chilled glass of juice
