POKE CAKE
         As the name implies , Poke cakes 🍰 are delicious cakes in which holes are made with the back of  a spoon after it is baked . Then some kind of liquid like condensed milk, pudding, custard ,pureed fruits, cream  etc is poured on the cake . This makes the cake slightly moist ,  and flavoursome.
              Originally the poke cake was a sponge cake filled with vanilla custard and topped with chocolate ganache. But now many improvisations have been made.
My  own  take  on this luscious cake  🍰
I have made two versions of the poke Cake
             POKE CAKE _ 1
CUSTARD TOPPED POKE CAKE
OIL LESS , BUTTER LESS & EGGLESS
Semolina rusk powder _ 1/2 cup                 Refined flour _            1/2cup
Whole wheat flour _ 1/2cup
sugar powder _      3/4 _ 1 cup
 baking powder _ 1tsp
Baking soda.  _  1 tsp
Milk as needed to make batter
Dry fruits , tutti frutti , vanilla essence
Make batter and bake for 40 _45 minutes till done
TOPPING
Milk. 2 cups
Custard powder ( any flavor of your choice. I have used vanilla) 1 _ 2 tbsp
Butter 1tsp
Cool well
Poke holes on the cake . But don't be too harsh that you damage the cake πŸ˜‚.
TOPPING
Make vanilla custard ( or any flavor) according to the  package instructions
Spoon into holes and spread a thin layer  on the cake
Add remaining dry fruits and tutti frutti in the custard
Thicken the remaining custard
Add butter and mix till it melts
Turn off flame
Beat the custard to make it smooth
Spread on the cool cake
Let it cool and set ( at room temperature)
Sprinkle a bit of rusk powder and dry fruits powder
Slice n enjoy

DATE FILLED POKE CAKE WITH HONEY   KINNOW / ORANGE  SAUCE
DRY  INGREDIENTS
Sift and keep aside
Refined Flour     3/4cups
Baking powder 1/2 tsp
Baking soda      1/2 tsp
WET INGREDIENTS
Beat till creamy and  fluffy  the  wet ingredients

Butter.      1/2 cup
sugar        3/4 cup( powdered)
PREPPING THE KINNOWS/ ORANGES FOR THE SAUCE
Extract  juice  of   2 kinows/oranges and keep aside .(You can also use tetra pack juice) .
DATE PUREE
Seedless Dates _ 1 cup(chopped)
Warm milk      1.5 cups
Soak dates in warm milk for sometime till they soften
Make a coarse puree of the dates with milk . Keep aside
METHOD TO MAKE THE CAKE BATTER
Pre heat oven to 180 ° celcius for 5 minutes
Fold in flour mixture  to butter mixture
Add  as much milk needed  and   make   a  smooth   batter
Add some kinnow zest to the batter and mix lightly.
In a greased and lined  cake dish pour in half of the batter
Spoon in the  date puree and spread the layer evenly
Pour in the rest  of  the cake  batter
Bake in pre heated oven  180 deg celcius for 35 _ 40 minutes or till a needle inserted into the middle of the cake comes out clean
Cool the cake and unmould it
Poke holes on the cake
Pour warm sauce over the cake and enjoy
HONEY KINNOW  /  ORANGE SAUCE
In a  glass bowl  mix
1Tbsp honey
juice of 2 kinows
1tsp sugar to give it a caramalised taste
Orange/ kinow zest - 1tsp
butter 1tsp
METHOD
Heat everythng on low flame stirring  continuously till sauce thickens  slightly
Keep cake on serving plate and pour the warm sauce over it .
Garnish with kinnow zest
Believe me ! Both the cakes are delicious .
