APPLE AND CINNAMON CAKE
( Its eggless, oil less and butter less )
' An apple a day keeps the doctor away'
This is an old saying we have all grown up hearing . But I wonder if the doctor can keep away from the aroma of the freshly baked apple and cinnamon cake 😜 .
The apple 🍎 and cinnamon combo by far is the best. Cinnamon gives a unique flavor to the apple cake .I had read that apple and banana puree act as egg replacers in making eggless cakes .By my experiments ,I have seen that apple and also banana puree act not only as egg replacers but also as oil and butter replacers . Inspite of not having any oil , butter or cream in my recipe, my cake turned out soft , spongy and delicious . Now I avoid using fats to bake to my level best . I have even used apple puree to make oil less and butter less pineapple cakes, pineapple and apple upside down cakes and even chocolate Cakes
INGREDIENTS
Apple 2 ( 1 chopped to small pieces to be mixed in the batter & 1 to be puree along with sugar)
Sugar 3/4 cup
Whole wheat flour ( Atta) _3/4 cup
Baking powder_ 1 tsp
Baking soda 1/2 tsp
Cinnamon powder_ pinch
Dry fruits
METHOD
WET INGREDIENTS
Puree 1 apple (with skin on as it has all the vitamins in it ) and sugar till smooth and creamy
DRY INGREDIENTS
Sieve Whole wheat flour, baking powder , baking soda n cinnamon powder 2 _ 3 times
BATTER
Add dry ingredients into wet ingredients and mix
Add chopped apples ( along with the skin )
and dry fruits
Mix the batter lightly
BAKING THE CAKE
Grease and line a cake dish with brown paper
Pour the batter in the cake dish
Bake for 35-40min or till done in pre heated oven at 180 degree Celsius
AIR FRYER _ Preheat airfryer at 180 degree celcius for 5 minutes
Pour batter in greased and lined cake dish
Bake for 18_20 minutes or till done
Cool a bit n demould
I have left it plain without any frosting or topping
