MALAI CAKE

MALAI CAKE ( MILK CREAM CAKE)
        Malai is the thick cream that floats on the top of the boiled and cooled full cream milk . It is skimmed off with a spoon  and collected in a clean container . This cream is used to make butter, ghee ( clarified butter) and a variety of Indian savory dishes .
          Though malai is not suitable for making cheesecakes or Indian sweets , it  can be used instead of oil or butter , to make scrumptious cakes , cupcakes and muffins .
         I have used malai as a base to make these  beautiful and amazing creations .
INGREDIENTS
Whole wheat flour / Refined flour _ 2 cups
Sugar (powdered)     _ 1&3/4 cup
Malai ( milk cream). _ 1 cup
Baking powder_ 1 tsp
Baking soda 1/2 tsp
Milk _ as needed
Vanilla essence
Dry fruits if using
I made the batter in the blender
METHOD
Preheat the oven to 180°celcius for 5 minutes
Grease and line a cake mould
Beat together malai and sugar .
Add  the sifted dry ingredients , (Atta / Maida  + baking powder+ baking soda ) in the malai mixture
Fold lightly to incorporate the ingredients well
Add milk if  needed
Make a smooth batter
Pour into prepared cake dish
Sprinkle dry fruits if using
Bake at 180 ° celcius for 40_45 minutes or till the cake is done
Cool the cake unmould
Serve this sumptuous MALAI CAKE  as it is or with topping of your choice .
To make MALAI CUSTARD CAKE add 2tsp custard powder in the batter
