Pineapple upside down cakes
PINEAPPLE UPSIDE DOWN CAKES
Pineapple upside down Cakes/cakes have their own classic appeal. It is a pride of every baker . Sugar sprinkled at the bottom of the cake dish caramelizes during the baking process lending that additional zing .
The soft and tender cake has a delightful amalgamation of sweet and slightly tangy note from the pineapples .
I have used fresh pineapple and juice for making the cake . The chopped pineapple pieces in the cake increases the flavor. Make this super delicious royal cake for your family and friends and enjoy loads of praise and adulation
Sieve the DRY INGREDIENTS
Whole wheat flour (Atta) / Refined flour (maida ) _ 1 &1/2 cup
Baking powder - 1tsp
Baking soda 1/2tsp
WET INGREDIENTS
To cream together till light and fluffy
Oil _ 1/4cup
Sugar powder _ 1/2cup
Pineapple essence
OTHER INGREDIENTS ( Fresh or canned)
I have used fresh pineapple juice and pineapple )
Pineapple pieces
Pineapple juice
Sugar 2 _ 3 tpsp to sprinkle at the bottom of the cake dish
METHOD
Preheat the oven to 180 degree celcius for 5 minutes
MAKING THE CAKE BATTER
Fold in the dry ingredients little by little into the wet ingredients
Add pineapple juice to form a lump free batter for the upside down cakes ( fresh/ canned)
(For the Biscuit pineapple _ Apple cake_ I have used glucose biscuits and milk to make the batter)
Add chopped pineapple and apple

pieces and raisins and mix lightly
PREPPING THE CAKE DISH
Arrange pineapple rings in a greased mould .
Drizzle sugar on them
( You can even caramelize sugar in a separate pan and pour it over the Pineapples . I have tried both the versions . Obviously sprinkling the sugar is far more easier and hassle free ). ๐
Pour the batter in the decorated cake dish
Bake in a preheated oven of 180 Celsius for 35-40min till done
Cool and unmould
Enjoy with ice cream or as it is
PINEAPPLE _ APPLE BISCUIT CAKE
I have used the BISCUIT CAKE Recipe given in my blog earlier to bake this cake . I have added chopped pineapples and apples along with dry fruits as an experiment which was a super duper hit like the film ' Piku ' which we went to see in the evening that day followed by BTW Chaat and kulfi . Wow ! What a film . Mind-blowing . And so was my cake . Yippee๐๐ . A day well spent .
