ASSORTED CUP CAKES

It was my younger sister's Golden Birthday yesterday ( 2nd July) . She stays in  USA with her husband and son. She  is like a Godmother to my son , studying in USA . She has always been an extremely loving, caring, soft spoken, humble and responsible  daughter, sister, sister-in-law, daughter in-law , mother and aunt ( masi to my son ) .She makes it a point to call/ video call us n my son  regularly to know about our well being . My son , loves spending time with her and her family  during his vacations . She pampers him with gifts and goodies and spoils him mad during his visit to her place . 
             Made these assorted cupcakes as a small token of appreciation ❤️🌹🌹♥️♥️🌹🌹 
As here in India we are just two of us, I decided not to make a big creamy cake, but a small batch of cupcakes).

               ASSORTED CUP CAKES  
The basic batter is of
 Multigrain atta ( packaged , as I use it to make rotis every day. ) _          1cup
 Malai                             2 _ 3 tbsp
honey                      3 _4 tbsp or to taste
 baking powder _        1/2 tsp
 baking soda.  _.         1/4tsp
Vanilla essence  
Milk + water.        as needed
Other ingredients.  (for flavour and creating design)
Jam
Custard powder
Cocoa powder
 coffee powder
METHOD
(It's an easy one bowl batter)
Mix all ingredients in the mixing bowl
Make a smooth batter
PREPARATION
Pre-heat the oven to 180degree celcius for 5 minutes
Line and grease muffin tray with  liners
Keep aside
FOR CUSTARD CUP CAKES
Take out a couple spoons  of batter in a small bowl
Mix some custard powder
Pour in moulds 
FOR ZEBRA CUP CAKES
Divide basic  plain batter in two bowls
Mix cocoa and coffee powder in the other bowl 
Pour plain and Chocolate layers alternately
FOR MARBLE CUP CAKES
Follow the instructions as ZEBRA CUP CAKES but with make random zigzag pattern with  a tooth pick
JAM CUPCAKES
( I could only make one  ) 
Mix  jam ( I used store bought mixed fruit jam) _ just a wee bit as I had already used honey in the batter . It turned out yummy with a beautiful red colour . It looked like a red velvet cake πŸ˜ƒπŸ˜ƒ)
     Bake for 20_25 minutes or until a toothpick inserted into the centre of the cup cakes come out clean. 
Turn out on the wire rack to cool
Can serve with/ without the liners .I serve with the liners as my husband likes to childishly  rip them off before gorging on them 🀣🀣
