HEALTHY WHEAT FLOUR AND OATS CAKE
( Eggless and sugarless )
INGREDIENTS
wheat flour( atta) _ 1 &1/3 cups
oats powdered in the mixi _ 1/2 cup
lukewarm milk _ 1 cup
jaggery ( grated ) _ 1/2 cup
Dates ( chopped) _. 1/2 cup
oil / melted butter _ 1/4 cup
baking powder _ 1 &1/2 tsp
baking soda. _. 1/2 tsp
OTHER INGREDIENTS
vanilla essence
Some chopped nuts
(almonds, cashews and raisins)
Some tutti frutti
Oats. _. 2tbsp
METHOD
Preheat oven to 180 degree Celsius for 10 minutes
Grease and line the bottom of the cake dish with parchment/ brown paper
Grind oats to make powder
Grate the jaggery to make powder
DRY INGREDIENTS
Sieve Wheat flour, oats flour, Baking powder and Baking soda in a bowl
WET INGREDIENTS
Soak jaggery in some lukewarm milk till it dissolves
Soak dates in lukewarm milk till soft
Blend together with some milk
Sieve it to remove the impurities
( You can use 3/4 _ 1 cup of sugar instead of jaggery and dates)
Add oil / melted butter
Add vanilla essence
Mix all the wet ingredients together
MAKING THE BATTER
Add the dry ingredients in the jaggery & dates mixture
Mix together to make a batter ( use milk)
Add some dry fruits and Tutti Frutti
Add 2 tbsp of oats
Mix to form a batter ( Don't over mix)
BAKING THE CAKE
Pour the batter into the prepared cake dish
Sprinkle the remaining dry fruits and Tutti Frutti
Bake at 180 degree celcius for 35 _ 40 minutes or till a tooth pick inserted in the centre of the cake comes out clean
Cool the cake for sometime ( cover it with a kitchen napkin) on the wire rack
Unmould and slice
Enjoy with tea or coffee
