 AQUAFABA CAKE

AQUAFABA is a new substitute for egg whites  It is used for baking eggless cakes and  macaroons .

AQUAFABA is the liquid you get after boiling good old chane . As I was soaking the chanas yesterday, I decided to try this cake . The recipe has been with me for quite a long time . 

Aqua means water and Fana means beans . So AQUAFABA means water of beans 


TO MAKE THE AQUAFABA 

Soak 2 1/2 cups of chickpeas overnight.

Wash and pressure cook with enough water above the chickpea level. Pressure cook for 10-15 minutes. 

Once you open the cooker, drain the water. It will be thin and slightly brownish. 

Reduce it until it becomes thick and dark brown. The consistency after cooling must be like thick buttermilk. 


INGREDIENTS AND METHOD FOR BAKING THE CAKE

WET INGREDIENTS

Aquafaba -.                 3/4 cup

 Vinegar / lemon juice -1 tsp

Sugar( powdered  )       3/4 cup              

Oil. / Malai                                2 tbs

Vanilla Essence              1 tsp

DRY INGREDIENTS

All Purpose Flour/ Maida - 1 1/2 cups

Baking Powder -                  1 tsp

Baking Soda -                       1/2 tsp


INSTRUCTIONS/ METHOD


Preheat oven to 180°C.for 10 minutes

In a bowl mix together flour, baking soda and baking powder. Set aside.

In another bowl take the aquafaba and vinegar and start whipping with a beater.

Increase speed once the mixture becomes foamy.

Whip it until stiff peaks form. It will take about 10 minutes for this step.

Now gradually add sugar and keep on beating until all the sugar is dissolved and the mixture is thick and glossy.

Add  oil and beat until incorporated.

Finally add vanilla and  mix.


Add the flour mixture and gently fold the flour into the aquafaba. Do not over fold. Just fold it until all the flour gets incorporated.

Add dry fruits ( I have just added raisins as I wasn't sure about the outcome of the cake 

( I have added some milk to get the consistency though the actual recipe didn't mention it  ) 

Grease and line a baking dish 

Bake the cakes for 35-40minutes or until a tooth pick comes out clean.( Mine took 40 minutes)

Remove the cake from oven and let it cool for 5 minutes on wire rack.

Now flip the cake on the wire rack

Allow it to cool completely before decorating.
