DRY INGREDIENTS
Flour 2 cups
Baking powder. 1tsp
Baking soda. 1/2 tsp
WET INGREDIENTS
Banana. 1
Sugar 1/2 cup
Honey. 2tbsp
Oil. 2tbsp
Mango essence
OTHER INGREDIENTS
Mango. 1
Dry fruits, coconut flakes , raisins
Milk as needed to make the batter
METHOD
Preheat the oven to 180degree celcius chop dry fruits coarsely
Grease and line the bottom of the cake dish with paper
Chop mango into small pieces
Sieve dry ingredients and keep aside
Blend the wet ingredients in the blender
Add wet ingredients in the dry ingredients
Add some dry fruits, raisins , coconut flakes in the batter
Divide the chopped mangoes into 3 parts
Puree the 1st part of the mango pieces in the blender and add to the batter
Add 2nd part of the chopped mangoes as it is in the batter ( This will ensure that you get the taste of this delicious fruit in every bite )
Leave the 3rd part of the mango pieces for garnishing
Mix the batter using milk ( use cut and fold method )
Bake for 40 _ 45 minutes or until done
Cool the cake and demould
Garnish with dry fruits, coconut flakes and mangoes
Sprinkle freshly crushed green cardamom powder
