 SEMOLINA HONEY AND JAM CAKE 

WET INGREDIENTS 

Sugar _                  3/4 cup

Oil      _                  1/3 cup

Milk   _                   1/2 cup    

Lemon juice     

Vanilla essence 

DRY INGREDIENTS 

Semolina ( fine) _      1 cup 

Flour        _                   1/4 cup 

Baking powder _        1 tsp

Baking soda     _         1/2tsp 

OTHER INGREDIENTS 

Dry fruits _ chopped almonds,  pistachios,cashew nuts and raisins 

Milk to adjust the consistency of the batter if needed 

Dry fruits  for garnishing ( 1 _ 2 tbsp coarsely ground)

FOR HONEY AND JAM TOPPING 

Honey,  jam,  water 


METHOD 

Preheat oven to 180 °Celsius for 10minutes 

Grease and line cake mould 

Sieve and keep aside the dry ingredients , except Baking powder and baking soda 

Mix  lime juice and milk and keep aside aside to curdle to form butter milk 

Cream together the wet ingredients till light and fluffy 

Add dry ingredients to the wet ingredients 

Mix using the butter milk to form a smooth batter 

Keep aside for 15 _20 minutes 

Mix the baking soda and powder in some milk and add it to the Semolina batter 

Add the dry fruits and raisins and mix ( use more 




milk if needed 

Pour the batter into the prepared cake mould 

Bake at 180 °Celsius for 40 _ 45 minutes 

Check for doneness by inserting a toothpick in the center of the cake.  If it comes out clean,  it is done 

Remove from the oven and Cool on wire rack ( cover with a paper napkin to avoid the cake from drying out)

When Cool , Unmould the cake  

 Remove the paper ( I did not revert back the cake) 

FOR THE HONEY AND JAM TOPPING 

Mix the ingredients of the topping 

Brush on the cake 

Sprinkle dry fruits powder 

Cool the cake completely and slice
