SWEET POTATO CAKE




 SWEET POTATO  CAKE (EGGLESS )

The season of sweet potatoes is back again  .  So decided to make something sweet instead of the usual  sweet potato chaat or tikkis. So made this  eggless , oil less/ butter less and  sugar free healthy  cake . 

WET INGREDIENTS _ Blend together in blender into a puree

Boiled , peeled and roughly chopped sweet potato      _       1 cup 

Apple       _        1 medium

Dates ( roughly chopped and soaked in warm water)      1 cup 

Honey       _       according to requirement to adjust the sweetness    

Vanilla essence 

DRY INGREDIENTS  _ Sieve together 

Whole wheat flour    _ 1.5 cups 

Baking  powder        _   1 tsp

Baking soda              _    1/2 tsp 

OTHER INGREDIENTS 

PRALINE 

I have used crushed  gur peanut Chikkis ( bashed some readymade peanut chikkis with a rolling pin till coarsely ground 😆)

Raisins  ( you can use  chopped almonds, pistachios, cashew also)

METHOD 

Preheat oven to 180 degree Celsius 

Grease the cake dish 

Pour out the wet ingredients into a mixing bowl 

Add the dry ingredients in the wet ingredients 

Mix lightly using  cut and fold method 

Add some  praline ( reserve some for garnishing) 

Make batter using the water  in which  the  dates and raisins were soaked 

Pour the batter into the prepared cake mould 

Bake at  180  degrees Celsius for 40 _ 45 minutes or till a toothpick inserted into the center of the cake comes out clean 

Remove cake from the oven 

Cool it on a wire rack 

Drizzle some honey and garnish with the reserved praline 

Unmould and serve
