MANGO CHOCO MARBLE CAKE
Mangoes are king of fruits .It's the national fruit of India . It's popular world wide for it's unique flavor , taste and aroma . Summer is synonymous with mangoes . Though summers in India are dreadful and hated due to the sweat and grime it brings , mangoes make up for it . The mango is one of the most delicious seasonal fruits grown in India . Mangoes are very versatile and can be enjoyed as it is or as desserts , ice creams and cakes . Even in raw form , this delicious fruit can be enjoyed as pickles, chutneys or savory dishes .
I have used raw mango to make chutneys ( dip) , lentil ( dal), chicken . So I thought of using mangoes to bake a cake . I paired it up with chocolate and made it as a marble cake . I must say,it was one of the most amazing cakes I have baked . The subtle hint of chocolate , the contrasting color combination of brown swirls on a golden yellow cake and the crunch of dry fruits took the cake to a height . I just can't remain humble anymore .
Summers are about to start . And so will the season of mangoes . I am now thinking of new mango cake recipes . Hope to come out with them soon . Till then here is my take on this awesome fruit . Hope you like it and will surely try it. Do leave your feedback
MANGO CHOCO MARBLE CAKE
INGREDIENTS NEEDED TO MAKE THE CAKE BATTER
Atta / Maida _ 1 cup( I used whole wheat flour)
Sugar (powdered) _ 3/4 cup ( use more if mangoes are not sweet enough . )
Mango pulp _ 1 cup ( I used alphanso)
Baking powder _ 1tsp
Baking soda _ 1/2 tsp
Oil _ 1/3 cup
Milk/ mango juice if and as needed to make the batter . I used some mango juice to get the consistency
Green cardamom powder - pinch
Saffron _ pinch
Dry fruits of your choice
FOR THE SWIRLS
Ready-made chocolate sauce
METHOD TO MAKE THE CAKE
Preheat the oven for 5 _ 8 minutes at 180 degree celcius
Mix all the ingredients ( except Chocolate sauce) in the blender to form a smooth batter
( This is the basic mango batter)
NOW TO CREATE THE MARBLED EFFECT
Pour some mango batter into a greased and lined cake dish
Drizzle some chocolate sauce randomly in zig zag way on the mango batter
Pour another layer of mango batter
Repeat the process ending with chocolate sauce ( number of layers does not matter )
Swirl a tooth pick loosely in a haphazard random way .
Bake at 180 degree celcius for 35 _ 40 minutes or till done
Cool the cake and demould
Cut the cake into slices to reveal the beautiful swirls .
This cake doesn't need any frosting . It's beautiful in itself

I had baked this MANGO CAKE without the chocolate swirls , on my mother 's birthday a couple of years before she left us forever 😭. As mentioned earlier in one of my other Posts ,my parents were extremely fond of chocolates . So I had again topped it with assorted chocolates for her to enjoy. I have used the same recipe as above to bake this cake
