Three layered mava cake

THREE LAYERED MAVA CAKEThis is actually a basic cake batter with some khoya thrown in. The flavor of mava , carrots,dates and nuts make a perfect combination with a piping hot cup of coffee or tea on a cold chilly day . I  used left over store bought khoya  after making gajar halwa ( carrot pudding), another winter delicacy , to make this cake. It not only added flavor to the cake but also made it soft and spongy . Now over to the ingredients and the  recipe . Hope you will try it and treat your family and friends with a delightful creation just like I did .
 THREE LAYERED MAVA


 CAKE
BASIC BATTER
Atta / Maida. _. 1 cup
Baking powder. _ 1 tsp
Baking soda.     _ 1/2 tsp
Sugar (powdered). _ 3/4 cup
Softened butter _ 1/4 cup
Khoya / Mava / milk solids ( I have used store bought ) _ 1/4 cup
Milk as needed to make a smooth batter
Vanilla essence
Carrot 2 grated
Dates chopped  _ 8_10
Dry fruits
METHOD TO MAKE THE CAKE
Cream together  sugar powder and oil till light n fluffy ( wet ingredients)
In another bowl mix  atta +  baking powder+ baking soda + vanilla essence( dry ingredients)
Mix the mava with some milk in a small bowl to make it smooth and creamy
Add wet ingredients to the dry ingredients
Add the mava mixture
 Mix the cake batter lightly in one direction to incorporate all the ingredients
Add milk as needed to get the consistency
Divide batter into three parts
Leave one part white
To second add chopped dates and grated carrot
The third is the nutty layer with dry fruits
LAYERING THE CAKE
In greased n floured ๐Ÿฐ dish
Pour carrot layer
Then white layer
End with nutty layer
Sprinkle more nuts
Bake at 180deg c for 30_40 min or till done
