LAYERED STEAMED CAKE
It's my son's birthday today . But he is away in USA pursuing higher education . At this critical time of global lockdown he is all alone .

Layered Steamed Cake
INGREDIENTS
Whole wheat flour (Atta)
_ 1.5 cups
Baking powder_ 1 tsp
Baking soda_ 1/2 tsp
Oil _ 1/4 cup
Sugar (powdered)_ 3/4 cup
Vanilla essence, dry fruits
Method
Wet ingredients
Cream oil and sugar till light and fluffy
Add essence and mix
Dry ingredients
Sieve atta, baking powder and baking soda
Add to wet ingredients and make a smooth batter
Had read n heard that water makes atta cakes lighter than that made with milk . Today tried it . Yes the cake is soft .
Mix some dry fruits and mix
Divide the batter into two
(I have used my dhokla maker plates to make the cake so that it saved me from the extra work of cutting the cakes )
Divide the white / plain batter between two dhokla plates
Now in rest of the batter mix cocoa powder and some coffee
Divide the Chocolate batter between the other two dhokas plates ( 2 plates with plain/ white) batter and 2 plates Chocolate batter )
Steam till done ( you can even bake the cake at 180 degree celcius for 35_40 minutes or till done
You can even divide the batter into two parts . Then add cocoa powder in one part and make a plain and a Chocolate cake. and then divide them into 2 parts each .
Layering the cake
Layer them alternately with jam/ Chocolate sauce and dry fruits _ Chocolate cake, vanilla cake ..... ending with chocolate cake
Decorate as you wish
I have used home made Chocolate sauce as I didn't have any other thing
Chocolate sauce
Water
Cocoa powder
Sugar (powdered)
Cook for sometime on low heat till thick
Take off flame
Add vanilla essence n mix
Let it cool ( sauce will thicken a bit on cooling)
Use it to glue up the layers n also as a topping π

Very nice,its really difficult to prepare recipes of cake without cake and using egg substitutes.
