 SOHAN HALWA AND LADDOO CUPCAKES              ( made in the  airfryer)

Diwali and  Bhai Dooj are the time for  sweets and dry fruits.  But what do you do when these pile up with no one wanting to eat them anymore .Even my help has refused to take them home ( Didi ab aur meetha nahi khaya jata ) . 

        I googled  for recipes with  leftover sweets  and thankfully found a few recipes of  eggless cakes / cupcakes with  leftover laddoos n burfis.  I had a box of besan laddoos and last few pieces of sohan halwa  which I used in the batter  ( instead of custard powder) and for the topping  

            Made a batter with flour ( I have used whole wheat flour/ atta) , baking powder ,  baking soda , yogurt,  sugar  and few  crushed laddoos and sohan halwa  .  I made cupcakes in the airfryer and topped with  laddoo and sohan halwa rabri  , crushed laddoos and dry fruits 

Here goes the recipe of my   sohan halwa and laddoo cupcakes  

FOR THE CUPCAKES 

DRY INGREDIENTS 

Flour       _              1cup

Baking powder   _ 1/2 tsp

Baking soda       _  1/4 tsp

Crushed sohan halwa and laddoo mixture       5 tbsp 

Dry fruits and raisins 

Cardamom powder 

Sieve flour , baking powder and baking soda in a bowl 

Add 2 tbsp of sohan halwa and laddoo mixture ( keep aside the rest for making the topping) 

WET INGREDIENTS 

Yogurt            _              3/4  cup

Sugar powder _            1/3 cup

Oil / melted butter _      1/4 cup

Cardamom powder 

Blend together Yogurt , Cardamom powder and sugar powder till smooth in another bowl 

Add oil  and beat till well incorporated 

TO MAKE THE BATTER 

Mix dry ingredients in the wet ingredients in batches 

Mix lightly using cut and fold method to make the batter 

Use some milk if the batter is thick 

Preheat airfryer at 180 °Celsius for 5 minutes 

Pour batter into greased bowls and place in the airfryer basket 

Bake for  15 _ 20 minutes a 180 °Celsius 

Keep on the wire rack  to cool 

Unmould and decorate 

FOR THE TOPPING  

LADOO AND SOHAN HALWA RABRI

Mix 2 tbsp of  the reserved laddoo laddoo and sohan halwa with  some milk and crushed dry fruits 

Cook on low flame till a bit thick ( it should not be runny)

Spoon some thick rabri on each cupcake 

Sprinkle reserved crushed dry fruits  

Enjoy with your evening cup of tea or coffee
