CHRISTMAS CAKE π MERRY CHRISTMAS TO ALL GROUP MEMBERS & YOUR FAMILIES π€Άπ This year I have baked a simple Fruit cake Here is how I did it DRY FRUITS and NUTS _ I have used _ chopped Cashewnuts, almonds, pistachios , walnuts , dates, raisins, prunes CARAMEL _ Sugar _ 1/2cup Warm water _ 1/2cup Heat sugar on low heat till it melts Cook till it turns golden Remove from flame and add warm water gradually, stirring gently Put it back on flame and give it a boil Remove from heat
PEANUT & JAGGERY SYRUP Peanut andJaggery chikkies _ crushed _ 1/ 2 cup Add the crushed Chikkis in the caramel Put it back on flame n cook for sometime till the Jaggery melts Strain the syrup Cool the syrup
SOAKING DRY FRUITS AND NUTS Soak chopped dry fruits and nuts in caramel & Jaggery syrup ( reserve some dry fruits and nuts mixture for garnishing) Keep aside overnight ( I did this step yesterday n kept it in an air tight container in the fridge)
SPICE POWDER _ Grind to a fine powder, Sieve the following spices and keep aside Cinnamon _ 1 small stick small piece of nutmeg Few peppercorns, cloves and green cardamom each
WET INGREDIENTS _ Blend into a fine paste and keep aside Apple _ 1 Sugar _ 1/4 cup Milk cream ( malai) 1/ 4 cup Vanilla essence
DRY INGREDIENTS _ Sieve n keep aside Flour ( I have used whole wheat flour) _ 1& 3/4 cups Custard powder ( I have used butter scotch flavor) _ 1/4 cup Baking powder _ 1 tsp Baking soda _ 1/2 tsp Spice powder _ 1/2 tsp Ginger powder _ 1/2 tsp
METHOD
Preheat oven at 180 °Celsius for 10minutes
Mix wet and dry ingredients
Add the caramel and Jaggery syrup Add the dry fruits and nuts
Make a batter ( addmilk if needed to adjust the consistency of the batter)
Pour batter into greased and lined cake dish Sprinkle the reserved dry fruits Press it slightly with back of the spoon
Bake for 40 _ 45 minutes Remove from the oven Let the cake cool before unmoulding
