  My parents are celebrating their anniversary  in the heaven with the angels today  ( 19 November) HAPPY ANNIVERSARY MA & BABA🙏🙏❤️❤️🙏🙏 ❤️❤️ Miss you always ❤️💐🙏         They are now United together in their heavenly abode never never never never again......to part   They were the made for each other couple . They lived life to the fullest and enjoyed every bit of it with foreign trips to Europe n USA . Enjoying films at the film festival n going to trade Fairs at pragati maidan was an annual feature .Their common love for books made them start a library in the living room of the government house with books contributed by the members . Their gifts of encyclopaedias and books to my son , on his birthdays are still adorning the bookshelves of the house ..  Can never forget the home made cakes ,fish fries ,chops , cutlets ,roshogolla , luchi ,alu dom , ghughni , and ( pantua ( gulab jamun) parties at our Andrewsgang govt house dur...

APPLE STREUSEL CUPCAKES

 APPLE STREUSEL CUPCAKES Delicious 😋 with the right sweetness  FOR THE STREUSEL Flour _ 1 cup  Butter _ 1/4 cup 🧈 Sugar _ 2 _3 tbsp Cinnamon powder 1/2 tsp  APPLE LAYER _ Mix and keep aside Apple_ chopped into small pieces🍎 Honey 1 tbsp  Cinnamon powder  FOR THE CAKE  Blend the following in the blender ( Wet ingredients) Apple 1 small pureed🍎 Sugar 3/4 cup  Vanilla essence  Sieve the following together ( Dry Ingredients) Flour _ 1 cup Baking powder _ 1/2 tsp  Baking soda_ 1/4 tsp Make a batter   MAKING THE CAKE Preheat oven to 180°c for 10 minutes Grease and line muffin tray with liners  Spoon 🥄 in some cake batter into each liner  Now put in some apples pieces  Top with streusel mixture Bake _ 180°c for 25 to 30 minutes . I have some 5 extra minutes for the top to brown up  HONEY _ JAM DRIZZLE Beat some honey 🍯 and jam with some water till smooth  Drizzle over cooled cupcakes/muffins

   Baking cakes need no celebration , at least not for me. This is a super soft vanilla sponge cake topped with homemade caramel sauce .

BANANA PEAR CAKE

 BANANA PEAR CAKE  I baked this simple one bowl batter cake to celebrate my win in one of the few writing contests I have participated during the Lockdown .  Inspite of being a No oil , no butter no sugar cake, it turned out soft , moist and delicious with the right amount of sweetness .  Ingredients for the one bowl  batter Whole wheat flour _ 1 cup Banana_ 1  Pear 1 chopped into small pieces Baking powder 1tsp Baking soda_1/2tsp Jaggery/gur _ 1/2 cup( soaked in milk) Honey _ 3_4 tbsp  Cinnamon powder, vanilla essence Milk to make the batter I made a simple one bowl batter by hand using a spoon Bake in preheated oven for 35_40 minutes at 180 degree celcius  Drizzle Chocolate powder and cocoa powder on the cooled cake 

MANGO UPSIDE DOWN CAKE 🎂

MANGO UPSIDE DOWN CAKE (I made the basic batter in the blender) DRY INGREDIENTS Atta _ 1n1/2 cup  ( use maida if you want) Custard powder _ 2 tbsp  Baking powder - 1tsp Baking soda 1/2tsp WET INGREDIENTS - To cream together till light n fluffy Oil_1/4cup Sugar powder_ 1/2cup Fold in the dry ingredients little by little into the wet ingredients  Add milk / mango juice to form a lump free batter ( I used juice) Add chopped mango  pieces  mix lightly Arrange mango slices  in a greased mould  Drizzle some caramelized sugar on them  Pour the batter n bake in a preheated oven of 180 Celsius for 35-40min till done  Cool n unmould  Enjoy  I used 1big Malda mango for the recipe Though I had arranged them as shown in the collage , but I wonder what happened to the arrangement 🤔 Nonetheless, the cake is delicious .

DARK CHOCOLATE CAKE

DARK CHOCOLATE CAKE Who can resist Chocolates ? It's absolutely devine and sinful . Flour_ 2 cups Baking powder 1.5 tsp Baking soda 3/4 tsp Curd 1 cup Oil/melted butter_ 1/2 cup Sugar_ 1.5 cups Cocoa powder _ 1/2 cup Coffee powder _ 2 tsp( optional,but it enhances the taste and colour of the cake) Vanilla essence,dry fruits Method  Pre heat the oven to 180 degree celcius for 10 minutes Make a batter using the ingredients  Pour into a greased and lined cake dish Bake for 40 _ 45 minutes or till done  Can decorate as you wish

SEMOLINA CHOCOLATE FUDGE CAKE

FOR THE CHOCOLATE CAKE( made in the air fryer 😆) Semolina/suji.  _ 1 cup  Fresh homemade curd _ 1/2 cup Sugar  _ 3/4 cup Oil _ 1/4 cup Cocoa powder 2tbsp Coffee powder ( optional) _ 1/2 tsp Vanilla essence  Dry fruits ( optional)  Pre-heat airfryer 190 degree celcius for 5 minutes Mix all ingredients in a big bowl  Pour into a greased cake dish that fits into the airfryer ( bake  in  the attachment for baking cakes if you have it .)   Bake at 190 degree celcius for 25 _ 30 minutes or till done  Cool the cake  F OR THE FUDGE Chocolate sauce ( ready made) Cake crumbs Milk Mix all ingredients for the fudge(fudge mixture) Keep the cake in a micro friendly shallow dish  Pour the fudge mixture over the cake Microwave for 2_3 minutes till the fudge mixture sets  Cool and slice the cake  in the dish itself
